I am a self-trained herbalist. I became a vegetarian when I was a teenager in the 1960s. I was a San Francisco Bay Area hippie in the 60s and early 70s. Then I became a mom - the most important job I've ever had.

Now I live in a very small mountain community. The nearest fast food restaurant is more than forty miles during summer, and more than seventy miles in winter when the pass is snowed under.

Peanut Butter Sweet Potato Pie


To make Peanut Butter Sweet Potato Pie, you’ll need sugar, cinnamon, allspice, mace, salt, cooked sweet potatoes, peanut butter, milk, butter, eggs, and a pastry shell.

Ready?

Combine 3/4 cup sugar, 1 teaspoon cinnamon, 1/2 teaspoon allspice, 1/4 teaspoon mace, and 1/4 teaspoon salt. Mix well.

Stir in 1 + 3/4 cups cooked sweet potatoes. Mix well.

Stir in 1 cup of peanut butter. Stir until smooth.

Add two slightly beaten eggs, 1 cup of milk, and 2 tablespoons melted butter, and mix everything thoroughly.

Pour this mixture into the pastry shell and bake for 40 minutes in a 400 degree oven.
