I opened the journal that I keep in my country kitchen's pantry, and this is what I wrote:

Garden Sandwiches

I’ve got a small vegetable and herb garden growing outside. It has finally developed to the point where I can go out and harvest some veggies. Day before yesterday I harvested spinach, parsley and broccoli. There should be more before the season is over. Lots more!

Earlier this summer I was hooked on tomato and onion sandwiches. Very addicting! But now I’m diversifying and calling my treats “Garden Sandwiches” and trying to add as many garden goodies as I can.

A few minutes ago I had a sandwich which contained spinach, tomatoes, onions, parsley, and some of my current burrito filling. The burrito filling was made from mashed potatoes, brown rice, and spices… lots of spices. I highly recommend this!

I have a few questions… for those of you who are into creative vegan sandwich making.

1. What do you use instead of mayonnaise?

2. What veggies do you like best in sandwiches?

3. Any other ideas on what to put in there?

  2. I think a good alternative to mayonnaise is mustard.
    I like lettuce and other greens on sandwiches. And you didn’t do bad with tomato and onion.
    I guess you can put whatever you want on the sandwich and just experiment. :)

  3. Tomatos are my favourite veggies on a sandwich, but I really have no idea what I can substitute for mayonnaise. Sometimes I use peanut butter, but it’s quite the same: A lot of fat.

  4. I love hummus as a mayo alternative, or a touch of homemade vinaigrette. For veggies I usually go with what is in season, but cucumbers are always included!

  6. I’m not vegan by any stretch, but we eat a lot of what I would call ‘vegetarian’ meals.

    Mayonaise alternative is a tough call - I agree possibly hummus, though.

    Favourite veg in a sandwich? Open sandwich made with roasted aubergine (eggplant) definitely wins for me!

  7. Thanks so much for all the suggestions! I will definitely make some hummus for my sandwiches . . . I used to do that months back but had forgotten how much I loved it! Also the cucumbers and eggplant sound perfect… I have cucumbers planted outside - can’t hardly wait to have them produce for me! I didn’t plant eggplant this year so I’ll have to buy one to try this out. It sounds so good! Mustard - another great suggestion… I have a thing for gourmet mustards…

  8. Today’s garden sandwich - rated “tasty” . . . I used refried beans for the sandwich spread, cold. I had them leftover from a Mexican feast. They worked great! Delicious cold on bread! Inside I put sliced onions, fresh garden spinach leaves, and parsley, also fresh from my garden and chopped. I would have put a tomato but I’ve run out and all the tomatoes in my garden are green now. Anyway, it was a great sandwich so I decided to post about it here.

  11. Cucumbers, Tomatoes, Eggplants…man its making me hungry and I just ate lunch. Hummus is a great alternative and there is nothing like FRESH veggies.

  15. Vegetable sandwiches are really delicious given the vegetables are freshly pick from the garden. But they are more delicious if you add a strip of roasted chicken or beef. I love it!

  17. My favorite is avocado with spinach, tomato, onion and sprouts. Adding just a little basil makes it delicious. With the avocado you really don’t need mayo, if I add anything it is usually italian dressing, even better soak your onions in the italian dressing and they soak in all that yummy goodness. The only thing that can make it better is to put it on an herb bread fresh out of the oven.
